I must say I don’t typically make these burritos this big but this particular time I was making them for 12+ people so I could make these huge ones and cut them in half and still have each half about the size of a restaurant style burrito! As for what’s in them and the process…
Ingredients:
-burrito tortilla shells
-shredded cheese
-eggs
-salt
-pepper
-chorizo
-shredded hash browns
-salsa
-butter
-cholula mayo
Directions
1. In a pan melt some butter and add in hash browns, when they start to brown a little add salt and pepper! (Amount of butter and hash browns depends on how many your feeding!
2. In a separate pan cook up chorizo until halfway cooked and then crack however many eggs you want into the chorizo.
*the chorizo will “color” the eggs the same color so be mindful of how many you’re putting in.*
3. Cook up the rest of the way, and reduce heat to low!
4. In a bowl mix together cholula hot sauce and mayonnais! (Spicy mayo)
5. Smother your tortilla with spicy mayo and sprinkle a generous amount of cheese on top! Then the hash browns, then the eggs and chorizo & top with salsa!
6. Roll up and enjoy with a glass of apple juice!
