Shrimp & Sausage Alfredo

MY EVERY DAY CRAVING!! 

* I did not use homemade noodles this time, but when I’m feeling bougie, I will make the noodles from scratch and both ways is amazing! I mean, let’s be honest life is busy, and when you’re a mom constantly running around, the urge to make homemade noodles is not every day, at least for me! 😅 

 

Ingredients:

-spaghetti noodles

-salt

-water

 

Alfredo sauce:

-salt

-pepper

-Italian seasoning 

-heavy whipping cream

-Parmesan cheese brick (shred really small)

-pasta water

 

Pasta guts:

-Cajun andouille sausage 

-frozen tailless shrimp (sizing depends on your liking! I like medium!)

-garlic powder

-brown sugar

-butter

 

Directions

1. Fill a pot with water, add some salt! 3-4 dashes and then add your noodles.

2. Grab a LARGE non stick pan and on medium heat melt a whole stick of butter, add as much shrimp and sausage as you would like! (I typically use the whole sausage in the package we get!) Sprinkle garlic powder over all of it! Cook until sausage is sizzling, then pull out and put in a bowl! Next sprinkle some brown sugar over the shrimp! When shrimp looks a little brown and brown sugar is all melted down pull out the shrimp & place in the same bowl with the sausage!

3. Do you not dumb, leftover butter and brown sugar, anything left over in that pan leave there! For this section of cooking I like my heat between low and medium! Unfortunately, I never measured this part. Every time I try and measure a mess it up! You’re going to pour in heavy whipping cream until can you feel like it’s enough.

4. Add pasta water! I usually put in about a cup of possum water! Honestly, I eyeball it if this sauce is/looks watery, I add more heavy whipping cream!

5. Spices, spices, spices! Add a generous amount of salt, pepper, and Italian seasoning. Stir, stir, stir!

6. Shred a whole wedge of Parmesan cheese. (Shred small) you are going to stir in Parmesan cheese very slowly in very small amounts! 
7. turn on the heat to low hand, drain the pasta and add all the noodles into the sauce! Stir in pasta until sauce is fully covering the pasta and then dump in your sausage and shrimp! Stir & serve, if there is leftover Parmesan cheese sprinkle some on top as a garnish!
